month, we featured our newest favorite gluten-free food product
in our Product Test section, Don Ponchos Gluten-Free
Flour Tortillas. This month we bring you a collection of fantastic
recipes to go with those superb tortillas!
A few years ago, it seemed everywhere you
went, you were running into a new "Wrap" restaurant
specializing in the latest combination of ethnic ingredients
and creative flavorings all wrapped up in a flour tortilla.
Wraps are essentially soft burritos with a variety of fillings.
Regardless of the fillings and flavorings, they are all prepared
in basically the same way.
- Tear a piece of foil into a good sized
square.
- Heat a tortilla until soft.
- Place a heated tortilla in the center
of the foil square.
- Spread with a glue, this
can be anything that will help hold the ingredients together
like sour cream, re-fried beans, pesto, cream cheese, chutney,
etc.
- Place a fair amount of hot cooked rice
horizontally across the tortilla a little below center,
in about a 1-1/2" wide strip.
- Top rice with anything, sautéed
vegetables, cooked chicken, meat or fish, lettuce, cheese,
eggs, etc.
- Wrap it up. Fold the end of the tortilla
closest to you over the filling. Fold both sides in to the
center then roll the wrap away from you so that it forms
a closed packet or bundle.
- Repeat this same wrapping technique wrapping
the foil around the tortilla wrap.
- To eat, simply tear the foil away from
the top and peel away as you eat. This will keep the wrap
contained, warm and mess-free.
