Two Meals – Twice as Nice!
Getting creative in the kitchen and keeping things within budget can sometimes be challenging. One of the things we do in our family is try and maximize leftovers and use parts of leftovers to create a completely new meal the next night. This helps save a little money because often you only need to buy one chicken for instance and you can spread it over two nights, plus it is a great time saver since you can cook the chicken the first night and have it ready to go for the second night’s meal. Below we have several ideas on how to stretch those meals out:
Meal #1 Twice Baked Potatoes served with a green salad (bake 2 extra potatoes for tomorrow night’s soup)
Meal #2 Baked Potato Soup
Meal #1 Roasted Chicken with Fresh Herbs & Wine served with roasted potatoes & carrots
Meal #2 Chicken Tortilla Soup
Meal #1 Flank Steak with Asparagus & Wild Rice Pilaf
Meal #2 Steak & Lentil Soup (no need to cook the steak, just chop and add to soup)
Meal #1 Hot & Spicy Asian Chicken
Meal #2 Chicken Stir Fry with Cashews
Meal #1 Baked Salmon with Wine & Parsley served with steamed rice and broccoli
Meal #2 Linguini with Salmon (no need to cook the salmon, just add to sauce and cook until heated through)
