Since this product is a dry mix it will
store for a long time in your pantry.
Note: Perhaps Ruby Range has updated
their packaging…but the package we used appeared to have
an omission in the directions. Make sure you add about 1/4
to 1/2 cup of warm water to the batter before folding in the
stiff egg whites.

your baking with a gluten-free mix this is a great one to try. These mixes are
healthy for celiacs, diabetics and autistics due to the unique addition of mesquite
meal and teff flour. Cookie and cakes mixes are sweetened with unrefined sugar,
making it safe for most with sugar sensitivities. The Ruby Range is committed

Blend. For the purposes of our Product Test Review we tested
Ruby Range’s Chocolate Truffle Cake.
The Chocolate Truffle Cake utilizes mesquite
meal, teff flour and sucanat for some of it’s primary
ingredients — adding a unique and nutritious, and yet
delicious taste to this product. Mesquite meal is from pods
of the mesquite tree. A sweet tasting flour with a glycemic
index of 25, is up to 20% protein, and is high in fiber. Teff
flour is from a small grain originating in Ethiopia. With
its nutty sweet flavor it is high in potassium, calcium, iron,
protein and fiber. It provides B vitamins and many minerals.
Sucanat is from dehydrated fresh pressed cane sugar. It is
lower in sucrose and has a lower glycemic response than refined
sugar. Sucanat contains 35 mineral salts. One gram of Sucanat
equals 15 grams of carbohydrates.
This is a very interesting product…not
only does it taste great but it contains alternative grains
that add nutritional value. In addition this cake mix would
be great for diabetics due to its lower glycemic response
factor.
