YME: A little yeast-y, the crust provided a nice background without much interfering with the main attraction: the toppings.
HC: Did not end up trying these out as waffles - the waffle maker went the way of our other non-GF teflon appliances, back in the day - but they were delicious pancakes, alone, with syrup and even with chocolate chips or blueberries!
YME: A bit on the bread-like side, the crust is soft and fluffy on the inside but still crispy around the edges.
HC: We had some trouble with internal gumminess when cooked quickly at higher temperatures -- slow but sure certainly wins this race. That being said, they fluffed up enough during cooking to all but completely absorb chocolate chips - yum!
YME & HC: The ready-to-use packets are just the right size to have on hand.
YME&HC: Only available online through the OMGF! website, except for you lucky folks near Riverton, UT who can pick it up in person!
Both mixes performed very well, but are kind of "niche recipes" if you will. The YME flour made a great pizza crust, perfect for deep dish-style eating, but perhaps a little on the bread-y side for a normal pan pizza. The HC mix was great too, the perfect fluffy batter for blueberries or chocolate chips, but can be gummy if not cooked just so.

"You're My EVERYTHING"
Expandex Modified Tapioca Starch, Corn Flour, Brown Rice Flour, Potato Starch, White Rice Flour, Corn Starch, Coconut Flour and Xanthan Gum.
To test the "You're my EVERYTHING" (YME) mix, we chose the pizza crust recipe from OMGF! and it baked up very well! The dough can be rather bread-like, but made in a 14" pizza pan it makes the prefect deep dish style pizza.
We did not really have a handle on this characteristic of the crust for the test recipe, but were still impressed by the relative ease with which the dough came together, the dynamic crispy-on-the-outside, soft-on-the-inside texture of the crust and the way the slices held up in the refrigerator overnight (perfect!).
