When the pasta was al dente, the pasta had a pleasant taste with a hint
of bean aftertaste. In the baked macaroni and cheese, we thought it tasted very
close to wheat noodles.

Just boiled, the pasta looked perfect
and had a great texture. The pasta is a lovely color and boils
just like the wheat variety. The water does not get cloudy and
grey.
When baked in our macaroni and cheese,
the pasta was not as chewy or bouyant as typical wheat pasta.
It seemed to be a bit drier and had a slightly different texture
when chewed.

This month we tested dried macaroni style
pasta from Heartland Ingredients. The Heartland company produces
other gluten-free pasta products including Macaroni &
Cheese, Rotini, Linguini, Spaghetti and Ziti. They also produce
Navy Bean Flour and Pinto Bean Flour. The base ingredient
for Heartlands product line is bean flour.
This product is high in fiber and protein
and has more nutrients than rice or corn pasta.
We made our own macaroni and cheese from
this pasta and tested the pasta just after boiling and again
when baked with the cheese sauce.
