This month we tested Larrowe's Instant Buckwheat for Pancakes.This pancake mix is truly instant and requires nothing more than water or milk with equal parts of flour and liquid. With equal portions of liquid to flour, the pancakes rise nicely. For crepes, add more liquid to thin the batter and cook as normal.
Buckwheat is not a cereal nor a grass, it is a fruit. In Russia, buckwheat pancakes are known as 'blini' and served with sour cream and caviar. In France, the savory crepes are called 'galettes' or 'Galette Breton' and are used like a bread garnished with meats, cheeses and vegetables. The thin crepes, galettes, are often wrapped around a sausage or hot dog.
We use these buckwheat crepes for quick sandwich fillings and hot dog wraps. Since this mix requires no additional ingredients other than a liquid, it is ideal for camping with multiple uses from hot dog buns to breakfast.
Nutritionally buckwheat is a super food. High in iron, potassium, phosphorus and calcium buckwheat also contains rutin and vitamin B's.
