When we tested this recipe, we used one crust for a Quiche Lorraine and the second crust for a traditional pumpkin pie -- and we were not disappointed in the least! Admittedly, the crust is a little bit on the sweet side for savory recipes, but don't let this deter you! This crust can also be made egg free and/or dairy free.

Although perhaps still not as flaky as its a non gluten-free counterpart, Gluten Free Mama's pie crust certainly outshines any gluten-free pie crust we have ever tested! Just the right combination of crumbly and firm, the dough is easy to work with and bakes up to be picture-perfect! The pumpkin pie slice could actually be held and was just as tender, and yet firm with no sogginess, on day two. The Quiche Lorraine reheated beautifully -again with no compromise as to texture or stability as a crust.
