When we tested this product we made cupcakes (to compliment our Crazy for Cupcakes article). The cupcakes were quite delicious. They only had a very slight gluten-free taste (but VERY slight). The cake mix is sweet, even the kids who tried it commented on the fact that it was very sweet…but all in all it tastes just as you would expect a vanilla cake with chocolate frosting to taste.

The texture was very good. One note: make sure you don’t over bake the cupcakes or cake or the end result will be rather dry. But if you pull out the cake just when a toothpick inserted into the center comes out clean, you will end up with a very nice, moist cake. Another finding: make sure to cover the cupcakes or cake if you aren’t planning on frosting right away. If you don’t the top of the cake will get slightly hard.

These are both dry mixes so the shelf life should be at least 6 months to a year. Once baked my recommendation is to eat it or freeze it within a day of baking.

Overall we really liked Pamela’s Classic Vanilla Cake Mix and Dark Chocolate Frosting Mix. We think it is a great pantry basic for birthdays, special occasions, and especially for those moments with your child comes home and says – “Oh by the way, we need to bring cupcakes to school tomorrow for the class!”. |

Classic Vanilla Cake Mix Ingredients: Organic natural evaporated cane sugar, tapioca starch, white rice flour, potato starch, chicory root, sea salt, grainless & aluminum free baking powder (sodium bicarbonate, sodium acid pyrophosphate, potato starch), organic vanilla powder (contains corn derivative), rice bran, xanthan gum.
Dark Chocolate Frosting Mix Ingredients: Organic powdered sugar (contains 3% corn starch), organic cane powder (alkalized), gluten-free natural vanilla powder (contains corn derivative), sea salt.
This month we tested Pamela’s Classic Vanilla Cake Mix and Pamela’s Dark Chocolate Frosting Mix. Over the years at Glutenfreeda.com we have had many people contact us requesting a basic vanilla cake recipe. We have several delicious homemade cake recipes now available on Glutenfreeda.com, but there are many of us who either don’t enjoy starting from scratch or simply don’t have the time. Pamela’s has created a great solution to this problem. The Classic Vanilla Cake Mix is a cinch to prepare and only takes about 30 minutes to bake – and all you have to add is eggs, oil and water. The result is a moist delicious vanilla cake. You can use this mix for sheet cakes, round cakes and/or cupcakes. The Dark Chocolate Frosting was even easier to prepare – just place the mix, butter and a little water in a mixer and voila!...in a minute you have delicious light and fluffy frosting.
One of the things I really liked about these products is that Pamela’s uses organic ingredients where possible. In addition, on each package there are several suggestions for different variations on the mixes – so you don’t have to be stuck with just one cake, but one mix can produce several different types of cakes with some slight variations. For the cake mix there are directions on how to use the mix to make pound cake, lemon cake, carrot cake, spice cake, apple spice cake, coconut cake, pineapple upside down cake and sugar cookies. For the frosting you can easily modify it to make mocha frosting, chocolate orange frosting, chocolate raspberry frosting, chocolate & cinnamon frosting, chocolate chocolate chip frosting, chocolate cream cheese frosting, chocolate sour cream sauce, and chocolate pecan coconut frosting.
This is a great product for busy mom’s or anyone looking for a great basic cake for birthdays, kid’s school celebrations or any special occasion. |
