Glutenfreeda’s kitchens are always on the hunt for delicious breads that behave similar to wheat-based breads…slightly elastic, light, and not crumbly. As most of you know that is not an easy task when working with the unusual gf flours such as rice, corn, tapioca, etc.. We did happen to come across Mona’s French Bread. Quite simple to make — just mix lukewarm water with provided yeast packet and sugar, blend with a few ingredients such as eggs, melted butter and rice vinegar. Allow to rise and bake. The result was a beautiful French bread loaf with a nice, stable texture — quite suitable to be eaten plain, dipped in olive oil, eaten with roasted garlic or even sliced diagonally and used as sandwich bread.

Of course the bread is best eaten shortly after being baked, but we did find that you can easily store it in a bread bag, and you will find that the crust will stay crisp for a couple of days and the inside will remain moist.
