| Asparagus w/Parmesan & Prosciutto

Ingredients
2 bunches of asparagus, trimmed 6 slices prosciutto, diced 2 Tablespoons unsalted butter 3 Tablespoons Parmesan cheese shavings Salt and freshly ground black pepper to taste |

Directions
Blanch asparagus in boiling, lightly salted, water until just tender. Drain and immediately plunge into a bowl of ice water. Let sit for 2 minutes. Drain and set aside.
In a large skillet, brown prosciutto. Remove from skillet and set aside.
In same skillet, melt butter over medium-high heat. Add asparagus; sauteing until heated through and coated with butter. Add browned prosciutto. Adjust seasonings to taste with salt and freshly ground black pepper.
Transfer to a serving platter and garnish with parmesan cheese shavings. Serve immediately. |

Tips
|
You can blanch asparagus ahead of time. Just cover and refrigerate until right before serving. When ready to serve, saute them in butter and proceed with the remaining directions. |
