Roasted Beets, Potatoes & Garlic with Lemon Creme Fraiche

Ingredients
4 beets, cut into quarters
4 white, Yukon or red potatoes, cut into quarters
4 large garlic cloves, unpeeled
Olive oil for coating
4 sprigs thyme
Kosher salt

1 cup creme fraiche
4 teaspoons lemon juice
Salt
Directions
Heat oven to 400 degrees F.
Place beets in a baking dish and rub with oil. Bake in oven for 15 minutes. Rub potatoes and garlic cloves with oil and add to baking dish. Add thyme sprigs and bake for 1 hour.
Mix creme fraiche with lemon juice and serve with beets and potatoes.
