Ingredients
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound chicken breasts, skinned, boned and cut into 1" pieces
2 Tablespoons olive oil
2 teaspoons garlic, minced
1/2 cup gf chicken stock
One 15 ounce can Great Northern beans, rinsed and drained
1/2 cup bottled roasted red peppers, cut into 1/2" pieces
Directions
In a small bowl, mix together basil, salt and pepper. Toss mixture with chicken pieces.

Heat a large skillet over medium-high heat and add chicken. Saute until browned and add garlic and saute for 1 minute. Add broth, beans and peppers; bring to a boil. Reduce heat to a simmer and cook for about 10 minutes or until chicken is done and sauce has thickened.
