Ceasar Salad Wrap

Ingredients

1 recipe of gf flour tortillas
2 garlic cloves, peeled and minced
1/2 teaspoon salt
2 teaspoons freshly squeezed lemon juice
1 teaspoon worcestershire sauce
salt and freshly ground black pepper to taste
1/4 cup extra-virgin olive oil
6 cups romaine lettuce, washed, dried and torn into bite-size pieces
1 ripe tomato, cut into 1/2 inch dice
Directions
Prepare the flour tortilla’s as directed in the recipe on the Glutenfreeda.com site.

In a small bowl, mash the garlic and salt together to form a paste. Whisk in the lemon juice and worcestershire sauce. Gradually add the olive oil, whisking constantly, until the dressing is emulsified. Adjust seasonings to taste with salt and freshly ground black pepper.

Toss the greens and tomatoes together. Drizzle salad dressing over the top of greens and gently toss to coat. Don’t drench the salad, just give it a nice gloss (you can refrigerate any remaining dressing for future use). Lay a tortilla on a plate and pile about 1-1/2 cups of salad in the center. Fold up the bottom of the tortilla and then fold the sides around the salad.
Tips
You could easily add some grilled chicken to this wrap for a nice variety.
