Roasted Pepper Bruschetta

Ingredients

4 roasted bell peppers, peeled, seeded and sliced (2 cups)
1 Tablespoons fresh basil, finely chopped
2 teaspoons balsamic vinegar
Salt & freshly ground black pepper
8 1/2-inch-thick slices gf French bread baguette, lightly toasted
1 garlic clove, peeled and cut in half
2 ounces fresh mozzarella, cut into thin strips
3 teaspoons extra-virgin olive oil
Directions
Preheat broiler.

In a medium bowl, combine peppers, basil and balsamic vinegar. Season with salt and pepper.

Rub both sides of bread with the cut sides of the garlic.

Place bread on a baking sheet; top with roasted peppers. Lay mozzarella strips diagonally over peppers and drizzle with oil.

Broil bruschetta, 6: from heat source, until cheese melts and starts to brown. Serve immediately.
Tips
To roast peppers, place peppers under broiler. Rotate the peppers until they are blackened on all sides. Remove from broiler and place in a brown paper bag or in a tightly covered bowl for approximately 5-10 minutes. Remove and peel outer skin and de-seed.
