1-1/2 pounds large cucumbers 3 Tablespoons rice vinegar 3 Tablespoons sugar 1 teaspoon salt 1/2 teaspoon sesame oil 6 dried chili peppers 1/4 cup vegetable oil 1-1/2 teaspoon sichuan peppercorns
Directions
Wash and dry cucumbers. Cut off both ends and cut in half. Cut each half into quarters lengthwise. Remove seeds and cut each quarter into 2" pieces.
Mix together vinegar, sugar, salt and sesame oil. Cut chili peppers into 1/4" strips.
In a skillet hHeat oil to hot and add sichuan peppercorns and chili peppers. Cook until oil is flavored and then discard peppercorns and peppers. Add cucumber pieces and stir-fry for 1 minute. Add sauce and blend. When sauce boils, remove pan from heat.
Transfer cucumbers to plate and let stand for 30 minutes. Refrigerate and serve cold.
