1 gf French bread baguette, sliced into 1/4 inch slices 1 red bell pepper, roasted, peeled, seeded and sliced into 1" pieces 12 slices of mozzarella cheese 1/4 cup fresh basil, cut into thin strips 1 garlic clove, peeled and cut in half
Lightly toast baguette slices on both sides under a broiler. Rub each piece lightly with the cut side of garlic clove.
Lay a slice of roasted red pepper on top toasted baguette slice and top with a slice of mozzarella cheese.
Broil until mozzarella is bubbly and lightly browned in spots. Garnish with fresh basil. Serve immediately.
