Polenta Rounds w/Black Beans & Pico de Gallo

Ingredients

1 tube of pre-made polenta
1 Tablespoon unsalted butter
1 teaspoon olive oil
6 ounces gf cream cheese, at room temperature
1 Tablespoon chives, minced
1 Tablespoon Italian parsley, minced
1 teaspoon thyme, minced
Salt and freshly ground black pepper to taste
1 cup canned black beans, rinsed thoroughly
1 cup Pico de Gallo
Directions
In a medium bowl, combine cream cheese, chives, Italian parsley and thyme. Season to taste with salt and freshly ground black pepper. Set aside.

Prepare Pico de Gallo or your favorite gf salsa.

In a medium skillet, heat olive oil and butter over medium heat. Slice polenta into 1/4 inch slices. When the skillet is hot, add 5-6 polenta slices and sauté until polenta is firm and slightly browned, about 5 minutes per side. Remove from skillet and drain on paper towels. Repeat with remaining polenta.

To serve, spread cream cheese mixture over polenta. Top with black beans and pico de gallo. Serve immediately.
Tips
You can buy premade polenta in tubes at most well-stocked grocery stores.
