1/2 cup mascarpone cheese 1 Tablespoon Italian parsley, chopped 1 teaspoon fresh thyme, chopped 1 teaspoon fresh chives, chopped Kosher salt and freshly ground black pepper to taste 1 shallot, thinly sliced 4 ounces gf smoked salmon, flaked Gf crackers Fresh chives for garnish
In a small bowl, combine mascarpone cheese with herbs; season to taste with salt and freshly ground black pepper.
Spread mascarpone mixture over crackers and top with a thin slice of shallot and a flake of smoked salmon. Garnish with fresh chives and serve.
We used Dr. Schar’s Pizzirilli crackers (available at www.glutino.com). These are small buttery crackers, perfect for bite- size hors d’oeurves. You can also try Blue Diamond Nut Thins for a great alternative.
