Shrimp & Pork Stuffed Wontons

For wonton skins:
2-1/2 cups gf flour
2 eggs
4 egg whites
2 teaspoons olive oil
Pinch of salt

For filling:
1/2 pound ground pork
1/4 pound shrimp, peeled & deveined
1 cup cabbage, chopped
1 teaspoon fresh ginger, peeled & minced
2 scallions, minced
1-1/2 teaspoon gf soy sauce
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 small egg, lightly beaten
Directions
Make wonton skins:
In a food processor blend gf flour, eggs, egg whites, olive oil and salt. Pulse until mixture starts to form a dough-like consistency.

Dump dough out onto a lightly gf floured surface. Knead dough until somewhat elastic. Form dough into a ball. Cover and let rest for 20 minutes.

While dough is resting, prepare filling.
In a medium bowl combine all filling ingredients (ground pork to egg). Cover and refrigerate until ready to use.

Prepare pasta machine for making lasagne.

Roll out a small piece of dough on lowest setting. Fold in thirds and repeat. Move roller setting to #2 and roll pasta through. Continue this process until you reach the #4 setting. If you use a wonton mold, dust it thoroughly with gf flour.

Alternately you can cut 2-1/2" circles out of flatten sheet of dough.

Place about 1/2 teaspoon of filling on
1/2 the circle (or 1/2 the wonton mold) and lightly coat edges with water (dip your finger in water and run it along outer edge of circle). Fold pasta over and pinch to seal.
Transfer wontons to a plate and repeat.
Cover prepared wontons with plastic wrap.

Preheat oven to 200°F.

In a large skillet bring about 1" of water to boil. Place a steamer on top (being careful not to touch water, but hang just above water line). Place several wontons in steamer basket (be careful not to crowd or overlap). Cover skillet and steam for 10 minutes. Make sure to keep an eye on water level as water will evaporate relatively quickly.
Remove from steamer and keep warm in a 200°F oven. Repeat process with remaining wontons.

Serve wontons with gf soy sauce.
