2 russet potatoes, washed and dried 2 Tablespoons olive oil Garlic salt Fresh ground pepper 2 green onions, sliced
Preheat oven to 450 degrees F.
Prick potatoes several times with a fork and bake directly on rack for 1 hour and 10 minutes. Let potatoes cool completely.
Line a baking sheet with foil. Cut each potoato in half and scoop out pulp, leaving shell 1/4" thick. With kitchen scissors, cut each half into thirds, lengthwise.
Place slices on prepared baking sheet and brush each slice with olive oil and sprinkle generously with garlic salt and pepper. Bake at 450 degrees F. for 5 minutes. Remove baking sheet and sprinkle potato slices with green onions and return to oven. Bake for an addtional 10 minutes. Serve immediately.
