12 small red, yellow and orange peppers 2 Tablespoons olive oil 2 Tablespoons onion, chopped 4 ounces feta cheese 1/4 cup frozen spinach, thawed and the water squeezed out
Cut a slit half-way around tops of peppers, about 1/2" from stems. Place peppers in a large pot of boiling, salted water and boil for about 5 minutes, or until just tender. Remove peppers from water, drain and cool.
Carefully lift tops of peppers and remove seeds.
Heat a small skillet to medium-high and add oil. When oil is hot, add onions and saute until translucent. Remove from heat.
In a small bowl, add feta, spinach and onions, mixing until blended. Carefully stuff all peppers with feta mixture.
Place peppers on a baking sheet and broil until peppers begin to blacken. Turn peppers and broil other side. Serve immediately.
