1/4 cup orange marmalade 3 teaspoons gf soy sauce 4 teaspoons fresh squeezed orange juice 1 teaspoon fresh ginger, minced 1 medium garlic clove, minced 2 scallions, finely chopped 1 Tablespoon cilantro, finely chopped 12 large shrimp, shelled & deveined 12 thin slices of prosciutto, cut into 1"x5" rectangles
Directions
Thread shrimp onto small skewers, starting at the thick end and finishing towards the tail, so shrimp uncurls.
In a small baking dish, combine orange marmalade, gf soy sauce, orange juice, ginger, garlic, scallions, and cilantro. Add shrimp and turn to coat. Cover dish and refrigerate for 30 minutes.
Wrap prosciutto slices around the middle of each shrimp.
Preheat a grill. Lightly spray each shrimp skewer on all sides with olive oil. Grill shrimp for about 2-3 minutes per side, or until shrimp is cooked through and prosciutto is lightly browned. Serve immediately.
