Ingredients
Dipping Sauce: 1/2 cup gf soy sauce 2 Tablespoons rice vinegar Juice from 1/2 lime 1 teaspoon sesame oil Dash of cayenne pepper (or more to taste) 2 teaspoons fresh ginger, minced 2 Tablespoons packed brown sugar
Wraps: 1/4 cup gf soy sauce 1/4 cup Mirin (sweet Japanese rice wine) 1/4 cup sake 1 Tablespoon corn starch 2 teaspoons cold water
2 Tablespoons sesame oil, divided 2 large garlic cloves, minced 3 teaspoons fresh ginger, minced 1 lb. ground pork 1 small red onion, chopped 1 medium red bell pepper, chopped 1 cup shiitake mushrooms, sliced 1 cup bean sprouts Salt and freshly ground black pepper
1 head of iceburg lettuce 1 bunch green onions, chopped

Directions
Make the dipping sauce: In a small saucepan combine 1/2 cup gf soy sauce, rice vinegar, lime juice, sesame oil, cayenne pepper, ginger and brown sugar. Simmer over medium low heat, stirring occasionally, until sugar dissolves. Remove from heat and set aside.
Make the wraps: In a small bowl, combine 1/4 cup gf soy sauce, mirin, and sake. In a separate small bowl, whisk together the cornstarch and water. Set aside.
Heat 2 teaspoons sesame oil in a wok over high heat. Add the garlic and ginger and sauté for 30 seconds. Add the pork; sauté until pork is browned. Remove the pork from the wok and transfer to a plate. Add 1 teaspoon sesame oil to the wok, when hot add the onions and bell pepper; sauté for 3 minutes or until vegetables are softened. Add the shiitakes; sauté for 2 minutes. Return the pork to the wok and add the bean sprouts. Stir fry until mixture is combined and heated through, about 2 minutes. Add the soy sauce-sake mixture and the cornstarch mixture to the wok; stir fry until the sauce thickens, about 2-3 minutes. Adjust seasonings to taste with salt and freshly ground black pepper. Remove from heat.
Separate the leaves from the head of lettuce. Wash thoroughly and dry each leaf. Serve the pork mixture on a bed of greens (optional) and have guests spoon the pork mixture and fresh green onions onto lettuce leaves. Wrap the leaves around the pork and dip into prepared dipping sauce. |

This dish is slightly unusual but delicious. Serve this as an appetizer or even as a lunch.
You can either serve the pork mixture on a bed of salad greens for a pretty presentation or you can also serve it in a decorative serving bowl. |
