Ingredients
1 lb. fresh mozzarella, cut into 1 inch pieces 2 large eggs, lightly beaten 3 Tablespoons gf flour, plus more for dusting Salt 1/2 cup vegetable oil
Directions
In a food processor, puree the mozarella until creamy. Add the eggs and gf flour and a pinch of salt. Process until combined.
Place about 1/4 cup of gf flour in a medium bowl or on a plate. Shape rounded teaspoons of the mozzarella cheese mixture into 1 inch balls. Roll the balls in the flour to coat the outside. Set aside balls on a plate while you roll the remainder.
Heat the oil in a large skillet to 350°. Line a wire rack with paper towels. Fry the mozzarella balls in the oil until golden, turning halfway through, about 2-3 minutes total. Note: some of the balls may burst open during the frying process. Transfer the balls to the paper towels and let drain. Season with salt. Repeat process with remaining mozzarella balls. Serve immediately.
