Makes 4 small servings. Difficulty
1 large English cucumber 1 teaspoon fresh mint 1/2 teaspoon fish sauce Salt to taste Mint for garnish
Peel, seed and dice the cucumber. Place cucumber in a food processor along with mint and fish sauce. Process until smooht. Strain through a fine mesh sieve. Season to taste with salt and more fish sauce, if necessary.
Serve in decorative shot glasses or very small bowls. This soup is meant to "tempt the appetite" and should be served in small quantities.
