Ingredients
1 gf French bread baguette 1/2 cup walnuts 8 ounces soft goat cheese 1/4 cup honey 1/2 tablespoon fresh rosemary, chopped
Directions
Cut the baguette into thin slices and place slices under a pre-heated broiler on a cookie sheet. Lightly brown one side then remove from oven.
Adjust oven temperature to 350°F.
Place walnuts in a dry skillet over medium high heat. Toast the walnuts until lightly browned, about 3 minutes. Transfer to a cutting board and let cool. When cool, coarsely chop.
Turn baguette slices over and spread each slice (untoasted side) with goat cheese. Bake the baguette slices until edges are slightly golden and the cheese softens, about 10 minutes. Remove from oven and transfer baguette slices to a platter.
Heat the honey in a small bowl in the microwave for 20-30 seconds until warm.
Sprinkle baguette slices with toasted walnuts and rosemary and drizzle with warm honey. Serve.
Tips
Make baguettes ahead of time. We used the Gluten Free Pantry’s Country French Bread Mix and baked it in a baguette pan that makes three loafs.
