Ingredients
1 thick slice of gf bacon 2 Tablespoons olive oil 3 Tablespoons green onions, cut into 1/2" pieces 1 garlic clove, minced 1 shallot, minced Dash of chili powder 20 small shrimp, shelled and deveined and cut in half 6 eggs, lightly beaten 2 Tablespoons milk 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper
Directions
Preheat oven to 400 degrees F.
In a 10" oven-safe skillet, cook bacon over medium-high heat until browned. Add 2 tablespoons olive oil and tilt pan to coat evenly. Add green onions, garlic, shallot, chili powder and shrimp. Cook, stirring often, until shrimp are half cooked and slightly opaque, about 2 minutes.
In a bowl, beat eggs with milk and season with salt and freshly ground black pepper.
Pour eggs into skillet. When eggs start to set, place skillet in oven and continue cooking for 10 minutes, or until firm.
Cut into wedges and serve warm or at room temperature.
