Sausage Stuffed Mushrooms

Ingredients

24 mushrooms, stems removed
1 Tablespoon unsalted butter, melted, (or olive oil)
3/4 pound gf hot Italian sausage, casings removed
1 garlic clove, minced
1/2 cup gf breadcrumbs
1/4 cup roasted red bell peppers, chopped
3 Tablespoons fresh Italian parsley, minced
Salt and freshly ground black pepper to taste
2-3 Tablespoons parmesan cheese, grated
Directions
Preheat oven to 375 degrees F.

Toss mushrooms with melted butter or olive oil.

Heat a medium skillet over medium heat. Cook sausage and garlic, stirring to break up sausage, for about 5 minutes. Add
gf breadcrumbs, roasted peppers, and parsley.

Fill each mushroom cap with sausage mixture. Place mushroom caps on a baking sheet and top with parmesan cheese.

Bake until top is bubbling, about 15 minutes. Serve warm.
