Makes 2 cups Difficulty
1 Tablespoon olive oil 1-1/2 cups onion, chopped 3 Tablespoons raspberry vinegar One 15 ounce can garbanzo beans, undrained 1 Tablespoon cilantro, chopped 1/2 teaspoon ground cumin 1/2 teaspoon coarsly ground black pepper 1/4 teaspoon salt
HIn a skillet heat oil over medium-high heat. Add onion and saute until onion begins to brown. Add vinegar and bring to a boil, cooking until vinegar evaporates. Cool.
Drain garbanzo beans, reserving liquid. In a food processor add beans and cilantro and process until mixture resembles coarse meal. Add onion mixture, 1/4 cup garbanzo liquid, cumin, pepper and salt; process until smooth.
