Ingredients
3/4 pound medium shrimp, peeled and deveined 1-1/2 cups bean sprouts 4 green onions, chopped 1 Tablespoon fish sauce 1 Tablespoon lime juice Eighteen 8" rice papers Green part of green onions for securing packets
For sauce: 1/2 cup gf hoisin sauce 3 Tablespoons water 3 Tablespoons gf soy sauce 1 Tablespoon rice vinegar 1-1/2 teaspoon sesame oil 1/8 teaspoon red pepper flakes 1 teaspoon freshly minced ginger
Directions
For sauce: Combine all ingredients in a small bowl and mix well.
Cook shrimp in boiling water 1-2 minutes. Transfer to a cutting board and chop.
In a bowl, combine shrimp, green onions, fish sauce and lime juice.
In a large bowl of warm water, soak up to 6 rice papers at a time until they are softened.
Place a heaping tablespoon of filling in center of each paper and fold over all four edges to form a square, flat packet. Tie a green onion around each packet.
