Ingredients
4 slices gf bacon 2 game hens, washed and patted dry 3 Tablespoons unsalted butter, divided 2 Tablespoons olive oil, divided 3 potatoes, and cut into thin wedges 1/4 cup pancetta, chopped 2 Tablespoons Italian parsley, chopped Salt and freshly ground black pepper
Directions
Season cavity and outside of game hens with salt and freshly ground black pepper. Wrap 2 slices of bacon around each game hen; secure with toothpicks then truss birds with kitchen twine.
Preheat oven to 350°F.
In a large pan heat 2 tablespoons butter and 1 tablespoon olive oil. Brown game hens on all sides, turning occasionally.
Transfer hens to a roasting pan and roast at 350°F for 40-45 minutes or until juices run clear when pierced with a fork.
Meanwhile, return pan used for hens to stove top. Add 1 tablespoon olive oil and 1 tablespoon unsalted butter and heat over medium heat, scraping up browned bits on bottom of pan. Add pancetta and fry until lightly browned. Add potatoes and continue to fry until potatoes are done. Season with salt and freshly ground black pepper.
To serve, place game hens on a platter and surround with potatoes. Garnish with parsley.
