1 chicken, washed and rinsed Olive oil 1 small onion, cut into wedges 4 garlic cloves, peeled Sliced orange peels from 1 orange Salt and pepper Juice from 1 orange 1 Tablespoon gf soy sauce 2 Tablespoons honey 1 garlic clove, minced A pinch of ground cloves
Directions
Preheat oven to 450 degrees F.
Rub chicken all over with oil; sprinkle with salt and pepper inside and out. Stuff chicken with onion, garlic cloves and orange peel.
Place chicken in a roasting pan and roast for 30 minutes. Reduce heat to 350 degrees F and continue to roast for 1 hour and 15 minutes.
In a small bowl, combine orange juice, soy sauce, honey, minced garlic and cloves.
When chicken is 1 hour from done, begin basting with sauce every 15 minutes. When done, remove chicken from oven, carve and serve.
