Chicken Fricasee

Ingredients

1 free range chicken, cut into 8 pieces
Salt
Ground white pepper
3 Tablespoons extra virgin olive oil
2 Tablespoons unsalted butter
1/3 cup white wine vinegar
1/3 cup red wine vinegar
1/3 cup white wine
2 shallots, minced
3/4 cup gf tomato sauce
1-1/2 cup gf chicken stock
1 cup heavy cream
Directions
Season the chicken pieces generously with salt and white pepper. In a deep skillet, heat the oil and butter over medium heat. When hot, add the chicken and brown on all sides, about 10 minutes total. Transfer the chicken pieces to a platter.

Pour off any excess fat in the skillet. Off the heat, add the vinegars, scraping up the browned bits on the bottom of the pan. Add the wine and shallots and cook, covered, over low heat until softened, about 2 minutes. Add the chicken back to the pan, cover and simmer for 15 minutes. Transfer the chicken to a warm platter and tent with foil to keep warm.

Add the tomato sauce and gf chicken stock to the pan and stir to blend. Add the cream and cook, uncovered, over medium-low heat for 5 minutes. Return the chicken to the pan, turning the pieces periodically to coat, and cook for 10 minutes. Adjust seasonings to taste with salt and white pepper. Serve with rice, mashed potatoes or gf noodles.
