Makes 4 servings. Difficulty
1 free-range chicken, cut into 8 pieces 1/4 cup sake 1/4 cup orange juice 1/4 cup gf soy sauce 2 Tablespoons vegetable oil 2 Tablespoons sugar 1 Tablespoon fresh ginger, minced 2 garlic cloves minced 1 teaspoon orange zest Salt and freshly ground black pepper
Place the chicken in a large zip-lock bag along with the sake, orange juice, gf soy sauce, vegetable oil, sugar, ginger, garlic and orange zest. Seal the bag and refrigerate, turning occasionally for at least 2 hours or overnight.
Prepare a grill. Remove the chicken from the marinade (reserving the marinade for basting purposes). Place the chicken on the grill and grill for 8 minutes. Turn chicken, bastse with marinade and continue to grill for an additional 8 minutes. Turn again, baste and continue to grill until the chicken is cooked through (juices should run clear when pierced with a fork). Transfer chicken to a platter and tent with foil. Let rest for 5 minutes before serving.
