Chicken w/Blackberries

Ingredients

1/2 cup dry white wine
1 3-1/2 pound chicken, cut into 8 pieces
3 Tablespoons fresh thyme leaves
3/4 teaspoons sweet paprika
Salt and freshly ground black pepper
1/2 cup gf Chicken Stock
2 Tablespoons gf light brown sugar
2 Tablespoons fresh blackberries, mashed
2 garlic cloves, minced
2 Tablespoons white wine vinegar
1 teaspoon olive oil
1/4 teaspoon ground cumin
1/2 cup fresh blackberries for garnish
Directions
Preheat oven to 375 degrees F.

Pour 1/4 cup wine into a large non-reactive baking dish. Arrange chicken in dish, skin-side up. Sprinkle with thyme and
1/2 teaspoon paprika; season with salt and pepper.

Bake for 15 minutes. Add remaining 1/4 cup wine and then the chicken stock to the pan. Continue to bake for an additional
20 minutes; basting occasionally.

Meanwhile in a small bowl, combine brown sugar with mashed blackberries, garlic, vinegar, oil, cumin and remaining
1/4 teaspoon paprika.

Spoon blackberry mixture over chicken and continue to cook for about 10 minutes, basting occasionally, until juices run clear when pierced with a fork.
Transfer chicken to a serving platter and cover loosely with foil.

In a small saucepan bring cooking juices to a boil over medium heat. Cook until reduced by half, about 2-3 minutes. Season with salt and pepper.
Spoon over chicken and garnish with fresh blackberries; serve.
Tips
Serve this chicken with Saffron Rice with Pine Nuts and a Spinach Salad.
