4 chicken legs with thighs 1/3 cup minced garlic 1/4 cup lemon juice 1/8 cup olive oil 1 1/4 tablespoon dried oregano 1 teaspoon dried rosemary 1 Tablespoon coarse ground pepper 1/2-1 teaspoon salt 1/8 cup fresh chopped parsley
Preheat oven to 375 degrees F. Rinse chicken and pat dry. Place chicken in a baking dish. In a bowl, mix garlic, lemon juice, olive oil, oregano, rosemary, pepper and salt. Rub mixture evenly over chicken and arrange chicken cut side down in baking dish. Bake in oven until skin is well browned, about 1-1/2 hours. After 45 minutes, baste chicken with pan juices every 15 minutes. Transfer chicken to warm platter. Sprinkle with chopped parsley and serve.
