1 lemon, sliced 2 teaspoons olive oil 1/2 teaspoon lemon zest 1 Tablespoon lemon juice 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 6 garlic cloves, minced 1 teaspoon fresh rosemary, chopped 8 chicken thighs, skinned and boned 10 cherry tomatoes 10 gf kalamata olives 8 small red potatoes, quartered
Directions
Preheat oven to 450 degrees F.
Lay lemon slices in a single layer on bottom of a large skillet.
In a large bowl combine olive oil, lemon zest, lemon juice, salt, pepper, garlic and rosemary. Add chicken, tomatoes, and potatoes. Turn to coat thoroughly.
In skillet arrange chicken in a single layer over lemon slices. Place vegetable mixture around and over chicken. Bake for 55 minutes or until chicken is done.
