Chinese Rotisserie Chicken

Ingredients

Injection fluid:
1/2 cup gf chicken broth
1-1/2 Tablespoons sesame oil
1 Tablespoon rice wine or sherry
1 Tablespoon gf soy sauce
1 Tablespoon honey
1/4 teaspoon Chinese Five Spice-Powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground white pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon salt

For chicken:
1 chicken
1/4 teaspoon Chinese Five Spice-Powder
1 garlic clove, minced
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon sugar
Directions
For injection fluid:
Combine all ingredients in a sauscepan and warm just until blended. Inject into breasts, thighs, legs and wings.

Just before cooking, mix spices and garlic together and rub all over chicken. Truss chicken and rotisserie for 2 hours.
Tips
This recipe can also be made by roasting the chicken. To roast, cook for 30 minutes at 450 degrees, then reduce oven heat to 350 degrees for an additonal hour or until a meat thermometer reads 180 degrees.

The key to the flavorful taste of this dish is in the injection fluid. Inject the chicken 6 hours before you are ready to cook.
