Ingredients
One 4 ounce can green chile peppers 2 Tablespoons olive oil 1 cup diced onions 1 Tablespoon garlic, minced 1-1/4 pound gf chorizo 2 cups cooked rice 1 large egg, lightly beaten 1 cup chopped scallions 1/4 cup chopped cilantro 1/4 teaspoon salt 1/4 teaspoon pepper
Directions
Heat a large skillet over medium-high heat. Add olive oil, and when hot add onions, garlic and chiles. Cook and stir until onions are tender. Add chorizo and cook until no longer pink. Add all other ingredients and mix to combine. Use for stuffing poultry or cook seperately in a large, shallow buttered baking dish.
Cover and bake at 350 degrees F. for 20-30 minutes.
Tips
For homemade gf chorizo: 1 pound ground pork 2 Tablespoons cider vinegar 2 Tablespoons chili powder 3 teaspoons paprika 2 teaspoons vegetable oil 1 teaspoon sugar 1 teaspoon dried oregano 1 teaspoon ground cumin 1 teaspoon salt 1 garlic clove, minced Combine all ingredients and refrigerate over night.
