1 cup basmati rice 1/2 teaspoon salt 2 cups orange juice 1 Tablespoon orange zest 1 cup carrots, blanched and julienned
Place rice in a heavy medium saucepan and add orange juice and salt. Bring to a boil and cook until 1/2 the liquid has evaporated. Cover and reduce heat to a simmer. Cook for 20 minutes. Remove from heat but do not remove lid. Let rest for 5-10 minutes. Fluff with a fork and gently mix in zest and carrots. Serve immediately.
