1 Tablespoon unsalted butter 1 Tablespoon olive oil 1/2 zucchini, sliced 1/4 onion, sliced 1/2 cup snow peas, cut in half 1/4 red bell pepper, sliced 1 garlic clove minced Salt & pepper 4 ounces gf fettucini pasta Parmesan cheese
Cook pasta according to package instructions. In a large skillet, over medium heat, melt butter and oil. Add onions and garlic and saute for 1 minute. Add zucchini, snow peas and red pepper. Saute for 3-4 minutes. Season to taste with salt and pepper. Add drained pasta to vegetables and stir to blend. If mixture looks a dry, add a little olive oil. Sprinkle with parmesan cheese and serve immediately.
