Makes 6 servings. Difficulty
1 pound gf penne pasta 2 Tablespoons unsalted butter 1 small shallot, minced 1/4 cup vodka 2 cups heavy cream 1/2 red bell pepper, roasted & diced 4 ounces gf smoked salmon, cut into thin strips 3 egg yolks, lightly beaten 2 Tablespoons minced chives 1 Tablespoon fresh Italian parsley, minced Salt and freshly ground black pepper to taste
Cook pasta according to manufacturers directions. Drain.
Meanwhile, in a large deep skillet melt butter and add shallots; sautéing for 3 minutes. Add the vodka. Bring mixture to a boil. Cook until vodka evaporates, about 1 minute. Add 1-1/2 cups cream and simmer over medium high heat, stirring often, until liquid is reduced by half. Stir in roasted red bell pepper and salmon. Adjust seasonings to taste with salt and freshly ground black pepper.
In a small bowl, whisk egg yolks and remaining half cup of cream. Add egg mixture to pan and stir over low heat until sauce is creamy and warmed through, about 1 minute. Again adjust seasonings to taste with salt and freshly ground black pepper.
Just before serving stir in chopped chives and garnish with fresh Italian parsley.
