Makes 4 servings. Difficulty
1 cup baby basmati (or regular basmati rice) 1-1/2 cups water Pinch of salt 1/4 teaspoon ground corriander 1/8 teaspoon lemon zest
Place the rice in a medium saucepan and cover with water. Add a good pinch of salt. Bring to a boil. Reduce heat and simmer, covered, for 15 minutes. Remove the lid and fluff with a fork. Stir in the corriander and lemon zest. Adjust seasonings to taste with salt. Serve.
