1/2 Tablespoon olive oil 1/2 red bell pepper, diced 3 green onions, diced 1 cup uncooked long grain rice 2 cups gf Chicken Stock 1/2 teaspoon salt 2 teaspoons orange zest
Heat the oil in a heavy medium saucepan ove medium heat. Add the bell pepper and green onions; sauté for 5 minutes or until tender. Stir in the rice; sauté for 1 minute. Stir in the Chicken Stock and salt; bring to a boil. Cover, reduce heat to low and simmer for 20 minutes. Remove from heat and let sit (covered) for 5 minutes. Remove the lid and fluff rice with fork. Stir in the orange zest. Adjust seasonings, if necessary, with salt.
