2 Tablespoons butter 1 pound gf penne 1 pound gf smoked salmon, cut into 1/2" strips 1/2 cup parmesan cheese, shredded 1/4 cup parsley, chopped 2 shallots, minced 1 cup heavy cream 1/4 cup dry white wine Salt and pepper
Cook penne according to package instructions. Drain and set aside.
In a large skillet heat butter over medium- high heat; add shallots and saute 2 minutes. Add salmon to shallots, stir to mix. Reduce heat to medium, add cream and cook for 3 to 4 minutes. Add wine and cook for 2 minutes more. Add pasta to salmon sauce. Add 3/4 of parmesan to sauce and season with salt and pepper.
Garnish with parsley and remaining parmesan cheese.
