Enough noodles for 4 bowls 3 cups water 1 gf chicken boullion 1/8 cup gf soy sauce 1 cup cooked chicken pieces (optional) 1 small handful spinach leaves, cut into strips 1 green onion, sliced 2 mushrooms, sliced
Directions
In a large saucepan combine boullion, soy sauce and water. Bring to a boil, dissolving boullion.
Remove broth from heat and add spinach, chicken, green onion and mushrooms.
Pour broth over cooked noodles. Serve immediately.
Tips
Udon is traditionally made from wheat flour noodles. We modified our version using Soba noodles, a 100% buckwheat noodle.
The trick to cooking good Udon or Soba noodles is to not overcook them. They should be removed from the water, strained and rinsed with cold water as soon as they are barely done.
