3 slices of gf bacon, diced 2 garlic cloves, minced 1/4 cup basil, slivered 1 bunch asparagus, blanched 16 ounces gf penne 1/2 cup heavy cream 1/2 cup freshly grated parmesan cheese Salt and pepper to taste
Blanch asparagus for 3 minutes in boiling water; plunge into ice cold water to stop cooking process. Cut into 1" pieces and set aside.
Cook pasta according to package directions.
Fry bacon until browned all over. Remove from pan and set aside.
Drain excess fat from pan. Add garlic and sauté for 1 minute over medium heat. Add asparagus and bacon; cook for about 1 minute.
Place cooked pasta in empty pasta pan. Heat over medium-low heat. Add asparagus mixture. Toss with cream and parmesan. Gently stir in basil. Adjust seasonings to taste with salt and freshly ground black pepper. Serve immediately.
