1 Tbsp unsalted butter 2 Tbsp minced onion 1 Tbsp curry powder 1 tsp dill 1 tsp ground cumin 1/4 tsp salt 1/2 tsp crushed red pepper flakes 1 cup basmati rice 1 cup gf chicken broth 1 cup water 2 Tbsp finely chopped fresh cilantro
Preheat oven to 375. Melt butter in ovenproof saucepan. Add onion and cook over medium heat till softened, about 5 minutes. Stir rice into the mixture, add gf chicken broth, water, curry, dill, cumin, red pepper and salt and cilantro. Cover and bake in oven 15 minutes. Let rice set for 5 to 10 minutes, fluff with fork and serve.
