Sausage, Onion & Pepper Pasta

Ingredients

6 ounces gf spiral pasta (try Dr. Schar’s fusili)
1/2 green pepper, sliced into 1/4" pieces, then cut into thirds
1/2 red pepper, sliced into 1/4" pieces, then cut into thirds
1 large onion, chopped
4 garlic cloves, minced
14 ounce can of gf Italian style stewed tomatoes
1/2 pound gf medium Italian sausage, bulk, or casings removed
2 Tablespoon olive oil, divided
1/4 cup red wine
2 Tablespoons basil, chopped
1/4 cup Italian parsley, chopped
Pinch of red pepper flakes
Salt and freshly ground black pepper to taste
1/4 cup freshly grated parmesan cheese
1 Tablespoon fresh oregano, chopped
Directions
Make pasta according to package directions. Drain and set aside.

In a large skillet heat 1 tablespoon olive oil over medium-high heat. Add sausage; cook until browned. Remove sausage from pan and set aside.

Drain off any excess fat.

Add remaining olive oil to pan and saute onions, garlic, and peppers for about 3-5 minutes or until peppers are crisp-tender. Add tomatoes, wine, herbs, and a pinch of red pepper flakes; cook for 2 minutes, stirring to blend.

Return sausage to pan and toss to combine ingredients thoroughly. Season to taste with salt and freshly ground black pepper.

Serve pasta on warmed pasta plates and top with freshly grated parmesan cheese.
