In a large heavy skillet over medium heat add oil. When hot, add celery, onion, garlic and jalapeno pepper. Saute until vegetables soften. Add oregano and saute for another minute; transfer to a bowl and set aside. In a large bowl add masa, salt, cumin, baking powder and pepper. Stir to blend. Add butter to a separate bowl and beat with an electric mixer until light and fluffy. In 3 additions, alternately beat in masa and 2 cups stock, beating after each addition just until combined. Add eggs and beat until smooth. Fold in bacon, sauteed vegetables and corn. Stuff inside turkey and cook any left over stuffing in a buttered casserole dish. (If cooking separately, bake at 450 degrees F. Drizzle with 1/2 cup chicken stock, cover and bake for 30 minutes. Uncover and bake for 10 additional minutes.
